Soy Chorizo Tacos

I love soy chorizo, "soyrizo", from Trader Joe's!  When I want something to spice up dinner, it really hits the spot!

Last week, I made flour tortillas from scratch using the recipe from the Maseca masa flour bag.  While I mixed, pressed, and toasted the tortillas, my husband chopped onions and mushrooms and sauteed them.  Then he added the "soyrizo" just as they finished.

With some ripe avocado and fresh-squeezed lime, these soft tacos were almost gone before I could get a photo!  This was the only shot I got (with my phone) before they were devoured.  February with no dairy hasn't been difficult at all!

My tortillas weren't perfect, but tasted amazing anyway :)
